DRY PASTA AREA – PAVAN DIVISION
PRESS PHP 170/L2400 SPECIAL VERSION - Press for the production of 750-1000 kg/hr nest pasta. This press is equipped with one volumetric, screw-type flour doser and one micro-ingredients doser that drop the dosed product into a vacuum-tight star valve. After passing through a flow stabilising screw, the dry ingredients are premixed in a single-shaft premixer which transfers them into a second premixer where liquid ingredients (water and egg) are dosed and injected. The fine mixture is then deposited into a vacuum-tight "dough resting chamber" which replaces the traditional mixing tanks with rotating paddles. The residence time is such to guarantee a homogeneous and complete hydration of semolina before the extrusion stage. The variable pitch compression screw with a diameter of 170 mm. compresses the product into the 2400 mm. long rectangular headpiece. The extruded product, i.e. dough sheet or extruded threads, is conveyed into a nest forming unit with interchangeable nest forming tubes. This unit can form nest with variable diameter and dimension in accordance with production requirements. After this the product is automatically transferred into buckets with bottom in stainless steel net, inserted in transversal bars which convey the product all through the continuous drying line. Each bucket contains one full nest portion (or a submultiple of it) which will be subsequently deposited in a tray and sealed.






FRESH PASTA AREA – TORESANI DIVISION
PRESS FTP205/D600 for the industrial production of long-cut or short-cut fresh pasta. The machine is designed to fully meet fundamental requirements such as easy washing, consistent product  quality, high production yield, easy and quick maintenance.



The homogeneous, well hydrated mixture is obtained with liquid ingredients dosing pump and a volumetric, screw-type flour doser. The mixing tank is entirely built in stainless steel and is sized to guarantee the
necessary mixing time. The compression screw can be easily extracted from the headpiece side and is driven by a motor coupled with a gearbox. The system for the cooling of cylinder and headpiece ensures a constant control of the working temperature and is entirely controlled by a PLC. The round headpiece can be opened to facilitate washing procedures. A special device ensures a quick die change. The headpiece is equipped with a cutting unit and a set of pasta cutting knives. The electrical plant, including a control panel, motors and electrical controls wired until outer connections, ensures a quick installation and an user-friendly operation. 

Kneader-sheeter mod. SPW540 - Wash-down version: this machine can be washed with medium-pressure (25 bar) jet nozzles. It is entirely built in stainless steel and produces a 540 mm wide dough sheet with a thickness of 7 mm. This evolution ensures a complete sanitisation in all points of the machine.  

Ravioli forming machine mod. MRW540 - Fully updated machine in order to ensure high production performances and great reliability. The machine can be entirely washed with a medium-pressure jet nozzle.

Integrated mixer-kneader-sheeter mod. MKS400 - This unit concentrates two machines in a very small space: a mixer and a kneader-sheeter. Once fed with flour, water and egg, this machine produces a 400 mm wide dough sheet (also available for sheet width of 540 mm and 800mm).

The technological principles of this machine respect Pavan tradition: premixing, mixing time, kneading with 5 rolls, in order to obtain an excellent dough sheet without damaging its fundamental organoleptic characteristics. This machine is fully accessible from ground level and requires very limited installation spaces. Hinged panels and covers make sanitisation of all parts easy. The machine is controlled by a PLC and a local operator panel for the management of production recipes.







EXTRUDED PRODUCTS AREA – MAPIMPIANTI DIVISION
Former-extruder F55 for the production of pellets from pregelatinised raw materials using interchangeable dies and a cutting group. The mixture is obtained by mixing flours and liquid ingredients in the high-speed premixer. Solid and liquid ingredients are mixed slowly and accurately in the mixer, in order to obtain a homogeneously hydrated and stabilised dough in accordance with the best Pavan tradition. From the mixing tank onwards the dough can be maintained under vacuum. The dough is brought to the extrusion axis where the product is formed using a compression screw, a cylinder with heating/cooling system, a headpiece and a die to obtain the desired product shape. Finally, the product reaches the headpiece and is cut by a system with rotating blades. The headpiece is hinged in order to ensure accessibility during cleaning operation. The screw is also easy to remove. Each processing stage is controlled by a PLC. The user can interact with the machine using an operator panel installed on machine side.











Cooker-Extruder G55 to extrude and cook a wide range of flours and starches. Thanks to its versatility and to the flexibility of its regulations which are all automatically controlled by a PLC, this piece of equipment ensures a product with high and consistent quality. The mixture is obtained by mixing flours and liquid ingredients in the high-speed premixer. The mixture rests inside the mixing tank and is then brought to the extrusion axis. The product is cooked and extruded using an extrusion screw with modular sections and a jacketed cylinder with multiple cooking stages with independent regulation of the temperature in each stage. Finally, the product reaches the headpiece and is cut by a system with rotating blades. Each processing stage is controlled by a PLC. The user can interact with the machine using an operator panel installed on machine side. It will displayed a new series of pilot plant for pellet and extruded products model G55 & F55.

High-speed packaging system for long-cut pasta (spaghetti), composed of one double doser mod. SPL2-B and one horizontal continuous packaging machine mod. SO;
